Arrange the cole slaw mix in a layer covering the bottom of a medium frying pan set to medium high. Add the chicken, snow peas, pepper, and water. Cover the pan and let steam for 3 minutes. Some of the cabbage may brown and that will just deepen the flavor.
Uncover the pan and add the marinade and chives and stir to combine. Sprinkle with the toasted sesame seeds and serve.
