DRY INGREDIENTS
¾cupoat fiber
¼cupFiber Gourmet flour
⅓cupSwerve granulated
1tspbaking soda
1tspbaking powder
1tspcinnamon
WET INGREDIENTS
½cupplain non-fat Greek yogurt
1cupegg whites
1TBvanilla extract
¼cupwater
Instructions
Heat the oven to 350℉ and spray a loaf pan with non-stick baking spray.
Mix the dry ingredients in a medium bowl. Add wet ingredients to a small bowl and whisk until well mixed. Add wet ingredients to dry and stir until just combined - do not over-mix. Pour into the prepared pan.
Cover the pan with foil and bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Remove the foil and let the bread cool in the pan on the stovetop for 10 minutes. Then invert the pan onto a cooling rack. Turn the bread right-side up and let it cool 10 minutes more before slicing into sixths with a serrated knife.
