Ingredients
½sheetLavash bread(see Notes)
2wedgesLaughing Cow Creamy Garlic & Herb Cheese
2TBtomato paste(see Notes)
¾cuplow fat Mozzarella cheese
12slices25% less fat pepperoni(I use Hormel)
Umami Seasoning(or salt and pepper)
Instructions
Heat the oven to 375℉. I use my toaster oven, but you can also use your regular oven.
Spread the Laughing Cow cheese onto the Lavash bread, then gently spread the tomato paste over the cheese.
Evenly pile on the Mozzarella, top with the pepperoni slices, and sprinkle with Umami Seasoning (or salt and pepper).
Bake for 8-10 minutes or until cheese is bubbly. Transfer the pizza to a cutting board, and cut with a pizza wheel. You can cut small pieces like I have, or larger triangles or rectangles.
Notes
Lavash bread: It's like a big, rectangular tortilla. The one I use is Joseph's Lavash Bread and it's made from flax, oat bran, and whole wheat flour.Tomato paste: You can use tomato/pizza sauce instead if you like, but the paste is a much more concentrated, tangy tomato flavor. It pairs very well with the Laughing Cow cheese. If it is too much for you, just reduce the tomato paste to 1 tablespoon.
