Ingredients
12ouncesFiber Gourmet pasta(penne or rotini)
1TBolive oil
1medium yellow onion(finely chopped)
3clovesgarlic(minced)
½tspsalt
2(3.75 ounce) canssardines in tomato sauce
1TBlemon juice(about 1/2 lemon)
Instructions
Lightly salt your pasta water, and cook the pasta according to the directions on the box.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, and cook for 5 minutes until soft. Add the garlic and salt and cook for 1 minute.
Stir in the sardines with their sauce. You can break them up into tiny pieces or leave them as larger chunks. It's your choice.
Cook for 1 minute, then turn heat to low. Simmer until pasta is ready.
When the pasta is done, drain, and combine it, the sardine sauce, and the lemon juice in a mixing bowl. Serve!
