Low-Calorie Cinnamon Silk Cake


Are you craving something sweet and cinnamony? I’ve got the perfect high-fiber cake for you. Each thick slice comes in at just 49 calories, and the cinnamon flavor really shines through.

You can even top it with a simple mix of 2 tablespoons Swerve confectioners plus a teaspoon of vanilla extract and a teaspoon of water to make a lovely glaze. Ingredients

DRY INGREDIENTS
WET INGREDIENTS
  • ½ cup plain non-fat Greek yogurt
  • 1 cup egg whites
  • 1 TB vanilla extract
  • ¼ cup water

Instructions

  • Heat the oven to 350℉ and spray a loaf pan with non-stick baking spray.
  • Mix the dry ingredients in a medium bowl. Add wet ingredients to a small bowl and whisk until well mixed. Add wet ingredients to dry and stir until just combined – do not over-mix. Pour into the prepared pan.

  • Cover the pan with foil and bake for 35 minutes or until a toothpick inserted into the center comes out clean.

  • Remove the foil and let the bread cool in the pan on the stovetop for 10 minutes. Then invert the pan onto a cooling rack. Turn the bread right-side up and let it cool 10 minutes more before slicing into sixths with a serrated knife.
