Low-Calorie Cinnamon Silk Cake
Ingredients
DRY INGREDIENTS
- ¾ cup oat fiber
- ¼ cup Fiber Gourmet flour
- ⅓ cup Swerve granulated
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
WET INGREDIENTS
- ½ cup plain non-fat Greek yogurt
- 1 cup egg whites
- 1 TB vanilla extract
- ¼ cup water

Instructions
- Heat the oven to 350℉ and spray a loaf pan with non-stick baking spray.
- Mix the dry ingredients in a medium bowl. Add wet ingredients to a small bowl and whisk until well mixed. Add wet ingredients to dry and stir until just combined – do not over-mix. Pour into the prepared pan.
- Cover the pan with foil and bake for 35 minutes or until a toothpick inserted into the center comes out clean.
- Remove the foil and let the bread cool in the pan on the stovetop for 10 minutes. Then invert the pan onto a cooling rack. Turn the bread right-side up and let it cool 10 minutes more before slicing into sixths with a serrated knife.
