I try really hard to cook seafood or shellfish at least twice a week for the health benefits (and because I love it!), but sometimes it’s hard coming up with something that will please even people who don’t love fish.

Enter Sardine Pasta. I had been reading about how good for you sardines are, and it seemed like an excellent choice for a pasta dish since you can get them packed in tomato sauce.
I really like these King Oscar sardines in tomato sauce. Each fish is whole in the tin, and they have a delicious fresh flavor. If you’re not a fan of fishy tastes, these are perfect for you, since the tomato sauce cuts through and gives them a much more mellow flavor.
Low-Calorie Sardine Pasta
▸ INSPIRATIONIngredients
- 12 ounces Fiber Gourmet pasta (penne or rotini)
- 1 TB olive oil
- 1 medium yellow onion (finely chopped)
- 3 cloves garlic (minced)
- ½ tsp salt
- 2 (3.75 ounce) cans sardines in tomato sauce
- 1 TB lemon juice (about 1/2 lemon)
Instructions
- Lightly salt your pasta water, and cook the pasta according to the directions on the box.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, and cook for 5 minutes until soft. Add the garlic and salt and cook for 1 minute.
- Stir in the sardines with their sauce. You can break them up into tiny pieces or leave them as larger chunks. It’s your choice.
- Cook for 1 minute, then turn heat to low. Simmer until pasta is ready.
- When the pasta is done, drain, and combine it, the sardine sauce, and the lemon juice in a mixing bowl. Serve!
