My new fave low-calorie breakfast: Eggs on Toast with Thyme


Most mornings I have my low-calorie smoothie for breakfast, but sometimes I crave something hot. It’s cold out, and today is one of those mornings. So I scrambled up a couple of eggs with my secret, high-protein ingredient and seasoned them with thyme. Quick, delicious, and so filling!

Low-Calorie Eggs on Toast with Thyme

Ingredients

  • 1 slice Nature's Own Keto Bread (see Notes)
  • 2 eggs
  • 2 TB non fat cottage cheese
  • ¼ tsp dried thyme
  • 1 pinch salt
  • fresh-ground black pepper

Instructions

  • Put bread in the toaster.
  • In a small bowl, add the eggs, cottage cheese, thyme, salt, and pepper to taste. Scramble with a fork.
  • Spray a small frying pan with cooking oil, and set it on the stove at medium. When the pan is heated, add the egg mixture.
  • Stir with a spatula until the eggs are cooked the way you like them. Coax them into a toast-sized square shape towards the end of cooking.
  • Serve the eggs on the toast and enjoy!

Notes

Bread: I use Nature’s Own Keto Bread because it tastes good and has a very nice texture for only 35 calories per slice. Check the calorie count on the bread you choose.
