Every Friday I make pizza for the kids. They love it, and it’s one night I don’t have to prepare dinner. Win win. I used to order delivery, but that got to be really pricey, and frozen pizzas have come a long way since we were kids. The ones by Paul Newman are actually pretty tasty.
Unfortunately, pizza, frozen or delivery, has a lot of calories, and when I first started calorie counting I thought I’d never be able to have pizza again. Until this recipe for Low-Calorie Pepperoni Pizza I found on reddit. I modified the recipe to use low-fat instead of fat-free cheese because it is, well, cheesier. And I also use tomato paste instead of sauce because I like the tart flavor, and I always have a tube of it in the fridge. It is delicious and only 411 calories for a large portion. Not bad for a whole, satisfying meal.
Low-Calorie Pepperoni Pizza
▸ INSPIRATIONIngredients
- ½ sheet Lavash bread (see Notes)
- 2 wedges Laughing Cow Creamy Garlic & Herb Cheese
- 2 TB tomato paste (see Notes)
- ¾ cup low fat Mozzarella cheese
- 12 slices 25% less fat pepperoni (I use Hormel)
- Umami Seasoning (or salt and pepper)
Instructions
- Heat the oven to 375℉. I use my toaster oven, but you can also use your regular oven.
- Spread the Laughing Cow cheese onto the Lavash bread, then gently spread the tomato paste over the cheese.
- Evenly pile on the Mozzarella, top with the pepperoni slices, and sprinkle with Umami Seasoning (or salt and pepper).
- Bake for 8-10 minutes or until cheese is bubbly. Transfer the pizza to a cutting board, and cut with a pizza wheel. You can cut small pieces like I have, or larger triangles or rectangles.
