I get really hungry in the evening but not as much during the day. This means that I need to eat a big dinner and I always want dessert. Losing weight under these circumstances is challenging because dessert is usually so high in calories, but I’ve found a way to eat a low-calorie cake AND lose weight doing it!
You’ve heard of “mug cakes,” right? They’re quick and easy to make and pretty popular, but low-calorie they are not. Well, I made some critical adjustments to the recipe and now you can have moist, tasty cake for dessert starting at just 103 calories for a whole bowl-full! A key component in this recipe is the Fiber Gourmet flour. (If you need to use regular flour, add 64 calories. It won’t be as helpful in your weight loss, but it will still be tasty.)

Low-Calorie Protein Cake
Ingredients
Dry Ingredients
- ¼ cup Fiber Gourmet flour
- ½ tsp baking powder
- 1 TB protein powder (flavor of your choice, I use Quest protein powder)
- 1 TB Swerve granulated
Wet Ingredients
- ¼ cup almond milk (unsweetened)
- 1 tsp vanilla extract
Instructions
- In a microwave-safe cereal bowl, mix the dry ingredients.
- Add the wet ingredients and whisk with a fork until there are no more lumps.
- Microwave on high until the center is set, about 1 minute. (Watch out – the bowl will be hot.)
- Let cool for 5 minutes and dig in!
Notes
- 1 TB cacao powder (or unsweetened cocoa powder) (10 calories) – you’ll also need to add 2 more TB of almond milk (10 calories) and double the microwave time…
- 1 TB Lily’s sugar-free chocolate chips (40 calories)
- 1 tsp PB2 Pure peanut powder (10 calories)
- 1 tsp Keto sprinkles (5 calories) – sprinkle on top before baking and you get FUNFETTI!!!
- 2 TB canned whipped cream (20 calories)
- 2 TB zero calorie syrup
