This is such an easy dish to prepare, but it tastes like I spent way more time on it. And at just 198 calories it supports my plan to eat frequent low-calorie meals. I’ve been having it around lunch time for days now, and if you eat larger meals than I do, it is super easy to increase the servings below.
Why cabbage?
Cabbage is full of vitamin C, vitamin K, and folate as well as fiber and antioxidants, and makes a great alternative to broccoli and Brussels sprouts if you’re trying to get more cruciferous vegetables into your diet like I am. It’s also supposed to help lower your cholesterol, and that’s a real plus. Cabbage is a mild-tasting vegetable which allows the teriyaki marinade in this recipe to be the real star. Try this recipe and you’ll see what I mean!
Low-Calorie Chicken & Cabbage Teriyaki
▸ INSPIRATIONIngredients
- 4 cups cole slaw mix (or thinly sliced cabbage)
- ⅓ (12.5 oz can) chicken breast (drained & flaked (or 4 ounces cooked chicken, cubed))
- ½ cup snow peas (strings removed)
- black pepper (to taste)
- ¼ cup water
- ¼ cup G Hughes Teriyaki Marinade
- 1 TB chives (finely chopped)
- 1 tsp toasted sesame seeds

- Arrange the cole slaw mix in a layer covering the bottom of a medium frying pan set to medium high. Add the chicken, snow peas, pepper, and water. Cover the pan and let steam for 3 minutes. Some of the cabbage may brown and that will just deepen the flavor.
- Uncover the pan and add the marinade and chives and stir to combine. Sprinkle with the toasted sesame seeds and serve.
